Quick & Easy Microwave Suet Pudding

This microwave recipe was given to me by a friend about 15 years ago. I am still using it for “I’m still hungry, What can I eat??” moments and impromptu guests. So quick and easy and it uses long life store cupboard ingredients. Serves 4 approximately, depending on greadiness!

Ingredients

125g / 4oz Self Raising Flour

50g / 2oz Shredded Suet (beef or vegetarian)

25g / 1oz Sugar

1 Egg

6-9 tbsp Milk

Your choice of:

3 tbsp Golden syrup / Jam / Honey / Marmalade / Nutella

Method

Place Dry Ingredients in a Mixing bowl

Mix together egg and milk

Mix egg/ milk mix into the dry ingredients

Put topping choice into a greased 1.25l pudding basin (eg Golden Syrup) so it covers the bottom

Carefully spoon the pudding mix on top

Put in the microwave for 4-41/2 minutes until risen and spongy.

Serve with lashings of custard in your favourite bowl!
